Mandarin and Goat Cheese Salad

Call it wishful thinking, but the crisp lettuce and sweet fruit of this salad just scream out for spring. Lucky for me, this dish tastes great all year round, because I am in need of a little spring right now as I look forward to several more months of winter.

I like this salad as a side dish to coconut shrimp, but the cheese and almonds also make it meal-worthy. 

Prep Time: A few minutes. It’s super easy!


  • 2 cups baby romaine or spinach salad mix
  • 1/2 cup mandarin oranges in juice, drained
  • 2 T slivered almonds
  • 1/4 cup goat cheese, crumbled
  • 2 T light vinaigrette, preferably raspberry, salad dressing

Lay the salad on a plate or in a bowl. Drain the mandarin oranges and place delicately on the lettuce (you don’t want them to break apart until they are in your mouth!). Crumble the goat cheese over top. Add slivered almonds and dressing.

If you have different tastes, you can use as much of each ingredient as you want. The trick is to balance the bitterness of the goat cheese with the sweetness of the dressing and mandarin oranges. Enjoy!
