Chicken Burritos with Avocado Ranch Sauce

I may have mentioned before that I love Chinese takeout. Well, if Chinese is my favorite takeout, Taco Bell is my favorite fast food. One of my current menu choices is the grilled chicken burrito, in all its chicken, rice, and cheesy goodness. For those times I can’t make it to Taco Bell, I decided to try to make my own chicken burrito at home.

I don’t think this burrito will ever replace my beloved Taco Bell, but it’s a pretty tasty at-home version. This recipe makes about four burritos.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

For Burritos:

  • 4-5 frozen or fresh boneless, skinless chicken breast tenderloins or 2 boneless, skinless chicken breasts (you will need about 2 cups chicken)
  • 3/4 cup salsa
  • 1/4 cup water
  • 1 t chili powder
  • 1/2 t cumin
  • 1/4 t red pepper powder
  • 4 regular or whole wheat tortillas
  • 2 cups Spanish rice
  • 1 cup shredded cheddar cheese

For Avocado Ranch Sauce:

  • 1/8 cup ranch dressing
  • 1/8 cup butter milk
  • 1/2 avocado
  • 2 pinches salt
  • 2 T sour cream
First, begin cooking the Spanish rice as packaged. If you want to make Spanish rice from scratch, here is an insanely long recipe I found on Food Network. It sounds like it would be delicious homemade, but for this recipe I would prefer the packaged variety. This gives you more time to focus on the chicken. First, cook the chicken breasts. Then, cut them into about 1/2-inch pieces and put them back into pan to add the rest of the ingredients.
Cook Burrito Chicken
Add the salsa, water, chili powder, cumin, and red pepper to the chicken. Mix well and let simmer until most of the water is absorbed, about 10-15 minutes.

While the chicken is cooking, prepare the avocado ranch dressing. It saves time if you can prepare it ahead of time, but if you can’t it’s still pretty quick to put together.
Mash Avocados
Mash the avocados and mix with the rest of the dressing ingredients. Warm the tortillas in the microwave. Spread 1/2 cup chicken and 1/2 cup rice onto each. Add 2 teaspoons of the dressing and 1/4 cup cheddar cheese.
