Pasta Aglio, Olio e Peperoncino

finished pasta aglio

One of the things I feel very fortunate to have had in my life is the ability to travel. Through my job and my husband’s job, we have been able to visit many cities in the United States and abroad over the last few years. With that, we have been lucky to eat some of the best food at amazingly creative restaurants.

One of our favorite quick dishes is something we picked up on a business trip to Rome a few year’s ago. It is apparently a very popular Italian dish and I love its simplicity and versatility. It’s basically pasta in olive oil, garlic, and red pepper flakes. I’ve played around with the amount of each ingredient over the years to find what my family thinks is the perfect combination. It sounds so basic that I am surprised anew each time I eat it how much depth and flavor this recipe packs.  Continue reading

Parmesan-Crusted Shrimp Scampi

Parmesan crusted shrimp scampiAfter such a long time away from my blog, I wanted to make sure I posted a recipe that is true to my own tastes and, let’s face it, really reflects the amount of time I actually have to cook for my family on a nightly basis, which is generally very little. My Parmesan-crusted shrimp scampi takes the traditional dish and makes it a little bit easier and a whole lot cheesier. Continue reading

Hearty Italian Minestrone

Minestrone with Cheese2

It’s a blustery February afternoon with freezing rain outside as I write this, and I can’t help but believe that a warm, hearty bowl of minestrone would make all of the cold weather blues just go away. This minestrone is warm and flavorful without being too complicated, and it is packed with vegetables, so it makes me feel good about taking second helpings! Continue reading

Pineapple Pork Tacos with Fresh Pico de Gallo

Hawaiian Pork Tacos

Tacos are always a go-to meal for our family when we want all the food groups in a quick dish. I made these up about a year ago when I was trying to find something to do with pork chops I had in my freezer. I figured pineapple would taste good with them, so I went for an island-style dish and added the pico de gallo for some more vegetables and a little saltiness. We ended up with this: Continue reading

Sausage Gravy with Biscuits

Sausage Gravy Side View 2

Gravy. I wouldn’t eat mashed potatoes without it. No, really, gravy has it going on. It makes almost anything taste better (except maybe cupcakes). And what makes gravy even tastier? Loading it with Italian sausage and pouring it over warm biscuits. Biscuits and gravy are one of those meals you can pretty much eat any time of day. And because I am fairly new to this whole cooking thing, I only just recently realized how simple it is to make. Continue reading

Chicken Burritos with Avocado Ranch Sauce

Burrito with Chips

I may have mentioned before that I love Chinese takeout. Well, if Chinese is my favorite takeout, Taco Bell is my favorite fast food. One of my current menu choices is the grilled chicken burrito, in all its chicken, rice, and cheesy goodness. For those times I can’t make it to Taco Bell, I decided to try to make my own chicken burrito at home.  Continue reading

Impossibly Easy Bean Soup

Bowl of Bean Soup

Beans, beans, the magical fruit,
The more you eat, the more you toot!
The more you toot, the better you feel,
Let’s eat beans at every meal!

I’m sorry, I couldn’y help myself. My dad taught me that song when I was little, and to this day I can’t make a batch of bean soup without singing it.  Continue reading
