Parmesan-Crusted Shrimp Scampi

Parmesan crusted shrimp scampiAfter such a long time away from my blog, I wanted to make sure I posted a recipe that is true to my own tastes and, let’s face it, really reflects the amount of time I actually have to cook for my family on a nightly basis, which is generally very little. My Parmesan-crusted shrimp scampi takes the traditional dish and makes it a little bit easier and a whole lot cheesier. Continue reading

I’m Baaaaaaaack!

Hi everyone out there in the blogosphere who happens to be reading my little site. I just wanted to clue you all in on what’s been going on in my life. After a very long leave of absence that I took from my blog for family reasons, I have decided that I am itching to start cooking and writing again. I have a bunch of new recipes and food-related fun I can’t wait to share, so stayed tuned. I plan to start posting new recipes again THIS weekend!

Thank you so much for reading and eating. 🙂

Hearty Italian Minestrone

Minestrone with Cheese2

It’s a blustery February afternoon with freezing rain outside as I write this, and I can’t help but believe that a warm, hearty bowl of minestrone would make all of the cold weather blues just go away. This minestrone is warm and flavorful without being too complicated, and it is packed with vegetables, so it makes me feel good about taking second helpings! Continue reading

Sausage and Apple Hash Brown Skillet

Apple Sausage Hashbrowns

As I may have mentioned in my omelet post, I am a lover of all things breakfast. I also love how breakfast food conveniently doubles as lunch/dinner/snack food too. I made this hash brown skillet over the weekend. It’s a hearty and delicious way to start your morning, or a yummy dinner ready in less than an hour. Continue reading

Turtle Cheesecake Brownies

Turtle Brownie1

I’m going to admit it; I’m not a huge dessert fan. (Collective gasp.) My husband, on the other hand, was raised in a family in which holiday get-togethers often feature more desserts than actual food. Needless to say, our marriage has necessitated that I at least learn to make dessert, whether or not I always eat it. Although I am not a huge sweets person (I prefer a rare steak!), this dessert actually calls out to me. Cheesecake is one of the few cakes I enjoy, and adding the brownie gives it both chewiness and a little crunch. I am all about mixing textures in my food. Add the turtle toppings of caramel, chocolate and pecans, and I think we have a winner!  Continue reading

Pineapple Pork Tacos with Fresh Pico de Gallo

Hawaiian Pork Tacos

Tacos are always a go-to meal for our family when we want all the food groups in a quick dish. I made these up about a year ago when I was trying to find something to do with pork chops I had in my freezer. I figured pineapple would taste good with them, so I went for an island-style dish and added the pico de gallo for some more vegetables and a little saltiness. We ended up with this: Continue reading

Sausage Gravy with Biscuits

Sausage Gravy Side View 2

Gravy. I wouldn’t eat mashed potatoes without it. No, really, gravy has it going on. It makes almost anything taste better (except maybe cupcakes). And what makes gravy even tastier? Loading it with Italian sausage and pouring it over warm biscuits. Biscuits and gravy are one of those meals you can pretty much eat any time of day. And because I am fairly new to this whole cooking thing, I only just recently realized how simple it is to make. Continue reading
